Bakeries and pastry shops
Bakeries and pastry shops are establishments where breadmaking, related products and pastry products are used.
They may be industrial units or production units integrated in commercial complexes or in catering and beverage establishments, and may vary the procedure of access to the activity according to the typology of the establishment.

Legislation
Decree-Law no. 33/2017, of 23 March - ensures compliance with the provisions of Regulation (EC) No 1069/2009, which lays down health rules concerning animal by-products and derived products not intended for human consumption.
Decree-Law no. 37/2009, of 10 February - establishes the legal regime governing the veterinary controls to which products of animal origin intended for trade are subject.
Decree-Law no. 113/2006, of 12 June - aims to ensure compliance in the national legal order with the obligations arising from Regulations (EC) Nos 852/2004 and 853/2004, both of the European Parliament and of the Council of 29 April on the hygiene of foodstuffs and on specific hygiene rules for foodstuffs of animal origin, respectively.
Decree-Law no. 306/2007, of 27 August 2007 establishes the water quality regime for human consumption with the aim of protecting human health from the harmful effects resulting from the possible contamination of that water and ensuring the universal availability of water. clean, and desirably balanced water in its composition.
Portaria no. 52/2016, of February 26 - establishes the characteristics to which different types of bread and related products of bread or fine bakery should comply, and regulates aspects of their commercialization.
Portaria no. 254/2003, of 19 March - defines the characteristics and lays down rules for the labeling, packaging, transport, storage and marketing of flour intended for industrial and culinary purposes, and for pasta intended for pasta production and cuilinary uses.
